The wattle is so much a part of Australia it is one of our emblems. The wattle seed has been around for a while and it becoming one of our legendary bush tucker foods and has quickly become part of Australian cuisine. It has a lovely flavour not unlike coffee. It combines well with our macadamia nuts but it can be used for savoury or sweet dishes. it is better to buy it from a culinary source unless you are really familiar with bush tucker. We are not so keen on the perfume of the wattle because most of us are allergic to it over here…so eating the seed is good! My own particular favourite is the macadamia and wattleseed pavlova roll which you can get at the Adelaide Markets!! yum…oh, yum!!
