Cheese and Bacon Cornmeal Muffins

A measuring cup, a common instrument used to m...Image via WikipediaI am sharing my recipe with you because they make the house smell beautiful and are a good alternative to chocolate chip muffins!

Makes 12. 180 C    35 minutes

Grease muffin pan

1 cup cornmeal
1 cup milk
2 cups SR flour
1 cup grated parmesan cheese
1 cup bacon bits
1 good teaspoon dried basis
1 good teaspoon dried thyme
2 large eggs
Handful of Allbran cereal

Mix wet ingredients with the cup of cornmeal and stir well. Mix in all the other ingredients and stir well. The mixture needs to be wet so add a bit more milk if the eggs are smaller. Spoon into muffin pans so each section is nearly full.

Bake and cool on a wire rack if people can keep their hands off them for that long!
